Fresh Tomato Salsa

3/4 cup finely diced red onion
1/4 cup red-wine vinegar
1 jalapeno, seeded and minced
1/2 cup chopped fresh cilantro
1/2 teaspoon salt
1 pinch cayenne pepper, or to taste

I am a hobby gardener, canner and local shopper, and I am always on the outlook for recipes that come close to or better, commercially available canned products. Now, with the high gas prices buying locally grown produce and freezing, canning or otherwise preserving it may get popular again. I also have a freezer full of my own pre-prepared microwaveable meals but lack recipes and methods for the quantities to take advantage of locally produced goods. Help!
